Two cups

After slicing up half of the monster zucchini, I still had a ton left that I wasn't sure what to do with. Perusing Martha's gallery of zucchini recipes left me with three yummy-looking options:

Option #1:  Zucchini Spice Bread


Option #2:  Chocolate-Zucchini Cakes


Option #3:  Sweet Zucchini Cupcakes


All three looked equally delicious, but what it really came down to was how much shredded zucchini I could come up with:



Two cups, which is exactly the amount needed to double the Chocolate-Zucchini Cakes recipe.  Time to get started!  Results will be up tomorrow.
